It is amazing what we can do with a waffle iron.

My dad bought a box of shao baos. Imagine a pastry ball with juicy char siew in it. It is an absolute delight. I just hate it when the pastry falls all over me when I take a bite. So I waffled it.

Training was going to end late. That meant food has to be on the go on the way home. Conventional sandwich was going to be messy. Red and white cabbage+sriracha+garlic chicken packed between two buttered whole wheat bread was ideal. I waffled them. 

Instructions: Butter one side of a slice of bread. Place buttered side on hot plate. Top with blend of 2 tbsp mayo+1 tsp sriracha mixed cabbage salad. Top that with 2-3 tbsp of chicken. Butter another slice of bread. Buttered side faced upwards. Close cover of waffle iron. Wait till intensity of sizzling calms down. Sandwich should be browned but not charred when ready to serve. Eat straight away. 

Serving instructions: You can either stack one half over the other (mayo in between) or ear the halves separately (with more cabbage salad).

It used to be round which made it diffcult to eat so I waffled it.
